Is this a photograph of an Oriental garden? A fish tank with out-of-control algae? Sodden confetti after a St. Patrick's Day parade?
Nope. It's a well-kept secret -- a watercress pond not far from Kiko's House.
Watercress, one of the oldest known leaf vegetables, thrives in slightly alkaline headwaters and grows year round even in four-season climates.
I just love watercress as a salad garnish or in a sandwich, and it's rich in iron, calcium, folic acid and vitamins A and C. Yum!
